Nibble @ Cheesecake

mcvities2My Nibble @ cheesecake was created especially for McVitie’s to celebrate the launch of their new Digestives Nibbles range. A nibbly equivalent of McVitie’s much loved chocolate covered digestives, Nibbles are golden baked, crunchy biscuit balls covered in deliciously smooth milk chocolate. Incorporating the original biscuit, nibbles and the phrase to ‘nibble at’, the cheesecake serves up both slices and @ symbol. Seen both on top of the cheesecake and hidden within the creamy layer, you can guarantee McVitie’s biscuits feature throughout every bite and nibble. Because of the variety of chocolate covered digestives and nibbles in the McVitie’s range, I encourage you to try out different cheesecake combinations in the base and creamy top. Whether you match or mismatch biscuit and nibbles, the choice and cheesecake created is up to you. McVitie’s Digestives Nibbles @ Cheesecake

Ingredients

McVitie’s chocolate covered digestives

150g salted butter, melted

150g icing sugar, sifted

150ml double cream

500g mascarpone

500g cream cheese

1 tsp vanilla extract

McVitie’s digestive nibbles

Method

Grease and line the base of  a 20cm spring-form tin.

Blitz the biscuits in a food processor or with a rolling pin, into crumbs. Transfer the crumbs into a bowl and mix thorough the melted butter until the crumbs are completely coated. Tip the mixture into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge to firmly set.

Meanwhile make the filling. Place the icing sugar, double cream, mascarpone, cream cheese and vanilla extract into a large bowl and beat with an electric mixer until smooth, thick  and combined. Spoon half the cream mixture onto the biscuit base and smooth down roughly with the back of a spoon or spatula. Set aside 45 nibbles from the packet to use to decorate the cheesecake with later. Press the remainder, just under half the packet into the cream and cover with the remainder of the mixture. Smooth and even off the surface with a palette or rounded knife. Leave to set in the fridge overnight.

Remove the cheesecake from the tin and place your cut out @ at the centre of the surface. Score around the @ with a cocktail stick before carefully pulling the paper away to leave you with a guide. Next press the set aside nibbles into the cheesecake following the cocktail stick markings. You may have a few left over to nibble at before serving up generous slices of the cheesecake, to nibble @ and enjoy!
