My Angelic Sandwich cake was inspired by a certain technical challenge, resulting in yet another cake creation with a strong resemblance to bread. The lack of egg yolks and butter in an angel food cake means the crumb is even whiter and when baked in my sandwich mold is almost identical in appearance to a slice of white, or in my case cake! Lemon zest features in both the angel cake sponge, which can be seen in specks when the cake is sliced together with the homemade lemon curd filling. The latter of which is sandwiched inside the sandwich with freshly whipped cream. I decided to cut this particular sandwich into squares rather than triangles, but whatever your preference it would be a sin not to serve this particular angel with GIANT cups of tea! Amen to cake.
