My Blackberry and Apple Crumble cupcake, contains all the flavors, textures and comfort of the traditional english pudding, but within and on top of the classic cupcake! The cupcake itself contains real apples and blackberries, which are all bound together in a lightly spiced vanilla custard sponge. Custard ganache then covers each cupcake which is topped with a flapjack inspired crumble topping. Finally my cinnamon biscuit leaves, dried apple crisps and a flourish of fresh blackberries finish the cupcake off and start off the beginning of National Cupcake week which began this week, 16th-22nd Oct.
