My Arctic Cupcakes will add a spicy and sweet sparkle to any festive gathering. Made up from a sticky ginger cake covered in a creamy mint and mascarpone topping, the real magic comes from the frosty delights on top of the mound of mascarpone snow. From mint imperials and cadburys snow bite snowballs, through to a flurry of desiccated coconut snow and snowflakes it’s the polar bear and shards of glacier mint ice that make the bake truly arctic. Whether the cakes are left in their silver cases or removed on serving to reveal the treacly rich sponge beneath, a subtle dusting of edible silver glitter will provide the perfect frosty finish. With or without the option of mini indoor sparklers to really set the cakes alight!
