My Banoffee Birthday Cake was made in celebration for a friend who has a strong affection for both Banoffee and Twix Bars. I created 2 fillings and 3 layers of cake to make up the 23rd birthday bake. The fillings consisted of a mascarpone toffee and vanilla infused whipped cream, layered amongst slices of banana and twix. The cakes were a vanilla sponge and banana and brown sugar creation. I topped the tower of banoffee cake with a twix bar candle and toffee flame, alight a bed of birthday toffee dust.
