My Bonfire Cupcakes are one of the recipes within the ginger spice cake chapter of Quinntessential Baking. Ginger cake is not dissimilar to parkin, the lovely, dark, spicy gingerbread that is traditionally eaten on Guy Fawkes’ night. Inspired by that association, I’ve come up with these firecrackers. A whole, ganache-covered marshmallow sits on top of each cake – a reference to toasting marshmallows around a fire – while the sugar flames add a toffee flavour and striking finish. The edible firewood comes in the guise of broken up mikardo, pretzel and chocolate matchsticks all nestled together around the ganache covered marshmallow.
