My Bourbon at 30 cake was created for my good friend Paul’s 30th birthday. Paul is the biggest fan of Bourbon biscuits I know and you’d be amazed how many I’ve met! The cake itself was a dense chocolate orange sponge that was covered and sandwiched together with chocolate ganache and an unexpected filling in the form of Roses chocolates. Together with Bourbon biscuits, Paul’s other chocolate vice is the tangy orange creme within Roses chocolates, hence the reason the chocolate cake had the zest of an orange added to it. I was initially intending to use all tangy orange creme’s to create the unexpected centre of the cake, but despite having two full tins worth, I ran out! So I decided to intersperse them with the hazel whirl and new signature chocolate truffle. If you were wanting to re-create this idea and was feeling in a particular Forest Gump frame of mind the entire chocolate box selection could be sandwiched up inside the cake. Once smothered in two coatings of ganache, I stuck and surrounded bourbon biscuits around the entire sides of the cake and created a number 30 with them on it’s top. I’m thinking I might have to re-create this bake on Paul’s 35th birthday as this is actually the total amount of bourbon biscuits used to decorate the cake!
