My Cherry Tomato Chouxs are mini choux pastry puffs filled with a smoked trout pate and topped with a tomato glaze and basil leaf stalk. A pinch of cayenne pepper can be found in the pastry to add both a spicy kick to the taste and subtle tomato colour to the pastry. Whether you decide to enhance both the spice level and scale by piping beef tomato sized ones instead of cherry tomato canapé friendly ones is up to you.
