My Fish & Chip Cakes were made for my friend Kristina’s birthday and were the perfect bitesize birthday treat for the Joules print team. The cakes themselves are mini lemon drizzles to go with the fact you often squeeze lemon on to fish. The Lemon theme continues within the flavour of the buttercream, which covers the cakes and acts as an edible plate to plaice(!) the fish & chip biscuits and fondant peas. I decided to bake and present the cupcakes in paper sauce pots, like the kind you’d use to fill with ketchup. But in the case of my cake cases the ketchup can be found in the form of strawberry jam, filing the centre of each cake. Happy Birthday Kristina and Happy Friday!
