My Gardening Cake is a dense chocolate fudge cake, sandwiched with a coffee buttercream, to play on the fact that a flask of coffee is often accompanied by gardeners to keep caffeine and horticultural levels high. An upturned marzipan terracotta plant pot filled with chocolate cupcake crumb soil and ganache centre is the centre piece on top of the cake. Surrounded and made complete with sugar crafted sweet peas, leaves and seeds.
