My Lemon, Lavender and Blueberry Wedding Cake was made in Canada, for special friends of mine who were getting married in Vancouver. The cake itself was a lemon victoria sponge, which I laced with a lemon and lavender syrup. The filling of a cream and cream cheese combination sandwiched together with my homemade lemon curd squeezed out between the layers of sponge. Blueberries, both adorned and filled the centre of the middle cake as a reference to Canada and the landscape the cake was created in. Lavender, gypsophila and foliage from the wedding locations surrounding finished the whole cake off.
