My Spare Change Olympic Medal Biscuits are a tasty way of using up the assortment of chocolate gold coins I had amongst my ever depleting and expanding confectionery supply! Using gingerbread biscuit rounds as their base, the medals are made complete with a chocolate coin stuck on with caramel and a patriotic ribbon threaded through the biscuits at the top. Originally created for my friends Olympic themed party back in 2012, they hold sweet sentimental value and memories. Cheap in value but rich in taste, will be sure to be rolling more out for Rio.
