My Plum and Amaretti Crumble Cake with almond and mascapone frosting was inspired by the plentiful supply of plums given to be by my friends at Home at Eleven. As well as using the seasonal fruit within the sponge, I also used them to create a plum and cinnamon compote. Upon which I spread over the finished cake and under the creamy mascarpone coating. Finally a generous scattering of crumbled Amaretti biscotti’s and toasted almonds added a flavoursome textural crunch.
