My Rhubarb and Custard Doughnuts were made to mark National Doughnut week (12th-19th May). I have often enjoyed a jam and custard doughnut, but never together. So when I kindly got given a bunch of home grown rhubarb I couldn’t resist trying out my idea of rhubarb jam and custard, together in a doughnut. I wasn’t disappointed. The sweet yet tart rhubarb jam worked perfectly inside the moorish dough, especially next to the creaminess of the custard. Nursery food doesn’t get much better than this.
