My Simnel Egg cake with golden orange marzipan yolk is yet another of my alternative Easter bakes. I was making a fruit cake for my friends wedding cake yesterday, so I thought I’d use the extra mix to bake a Simnel fruit cake egg-as you do! Simnel Cake traditionally has marzipan baked into the middle of the cake so I thought I’d use it to represent the yolk at the centre of my fruit cake egg. Initially I was intending to cover the egg in a layer of coconut marzipan to act as a shell, but in the end decided to make boiled and fried eggs instead. This combination of coconut and orange marzipan actually make a great alternatives to the shop bought foam ones, although will always happily eat both.
