My Snowy Owl Oreo cupcakes are the latest addition to my owl inspired bakes. Rather than using the original chocolate oreos and milk chocolate button combination I decided to use vanilla oreos and white chocolate buttons to make a snowy as opposed to brown owl. The cake itself was vanilla instead of chocolate and I created a mascarpone and caramel fudge frosting to nestle under the biscuit and chocolate feathers. The cupcakes were made especially for the Cockpit Arts Christmas Open Studio’s in Holburn, where my talented friend Abigail Brown was selling her work.
