My White Chocolate and Ginger Cheesecake, was made for my friend Louise’s 30th, who loves both ginger and white chocolate. White chocolate chips featured in the ginger biscuit base and several bars of white chocolate and crystallized ginger were added to the topping. The latter of which consisted of three types of cheese, Ricotta, Mascarpone and Cream Cheese to enhance the creamy texture and cheesecake name itself! I presented it on a cheeseboard complete with a cheese knife, chunks of white chocolate, cheese shaped ginger biscuits and white chocolate mice to add to the overall effect. Sweet as opposed to cheese induced bad dreams fortunately followed the birthday night celebrations!
