From fairisles to flatbreads, medical expertise to sourdough science the passion and insight James communicates is as brilliant as the bread recipes itself. The Yum yums and chapter on ‘Nearly Breads’, featuring his legendary gingerbread barn structure with ingenious spun sugar cobwebs are already ‘proving’ to be my favourites.
