My Confetti Cupcakes illustrate that cupcakes needn’t be all about sugary frostings and sprinkles. For me, they should be delicious cakes in their own right topped off with a combination of ingredients that offers varying textures and colours. Decorated with fruit and flowers, these lemon cupcakes have the added bonus of a hidden lemon curd and raspberry centre, plus edible confetti that makes them a feast for your tastebuds as well as your eyes. Adorned with my signature marzipan bees as well as pineapple flowers, these cakes are inspired by and very much individual versions of my Midsummer Nights Dream Cake.
