My Egg Cupcakes are egg-cellent little bite sized cupcakes to enjoy over Easter. The cakes themselves are made from a lemon sponge and topped with a lemon icing complete with either lemon curd, foam fried egg or yellow skittle yolk. The hidden lemon curd yolk at the centre of the cakes makes them extra lemony and adds to the egg nature of the bake. Who needs a chocolate box or chocolate eggs when you can have an egg box full of cakes?!
