These Marmalade Cat Flapjacks, owe a great deal to a certain cat and book called Orlando. Taken from
my own book Quinntessential Baking, the recipe can be found within the Flapjack chapter, a definite favourite of mine! Adding orange zest and marmalade to the mixture makes a purrfect pair of flavourings – and the tangy citrus note goes so well with the chocolate of the cat’s paw print. I sometimes use an orange-flavoured chocolate for that too. You can create mini cat-flapjacks by baking the mixture in a mini-muffin tin, or split your mixture and make both little and large cat-flapjacks using a normal sized muffin/cupcake tin. If you want to create a giant pawprint, fit for a lion king, you can bake your flapjacks in a round cake tin too. I’m even considering creating a flapjack suitcase, for another marmalade loving animal called Paddington. A case for paws for thoughts and thoughts for food…
