My Gingerbread Baubles were inspired by my affection for Reese’s Mini Peanut Butter Cups. Their shape has always reminded me of the fixing on top of a Christmas bauble, which is how the idea for these biscuits was born. The Gingerbread Baubles are also adorned with a stained glass star, made using melted mints and toffees. You can leave out this stained glass element, if you prefer, and create simple star cut-outs. I like to use three sizes of cutter to produce a mix of baubles, but you can cut out just one size. The edible baubles make great gifts and lovely decorations to hang on the tree and are one of the recipes within my gingerbread chapter in Quinntessential Baking.
