Angel cake


My Angel Cake was spirited from the leftover angel sponge mix I’d used to create my giant angelic sandwich cake. After filling a silver foil cupcake case with the mixture I carefully placed a tiny amount into an equally small angel shaped cutter and let both rise to heavenly heights in the oven. Once baked and cooled, a sinful amount of freshly whipped cream topped the sponge,  together with a halo of citrus bright lemon and passionfruit curd. Finally my mini angel flew on to and topped off the creation as a heavenly reference to the cake’s name with a message to bake!
