My British Egg (aka Broody Hen!) is a twist on the Scotch Egg, using chicken instead of pork to play on the idea of “what came first the chicken or the egg?” The egg and chicken filling is surrounded with a shell of shortcrust pastry that is baked with an egg wash glaze. Sitting on an edible nest of cheese straws and rocket, puff pastry straws can be dipped in an egg cup full of lemon and parsley mayonnaise like soldiers. “Attention”, there’s a broody hen ready to be cracked into and eaten!
