My Caramac Hot Air Balloon cake was created to celebrate a couples surprise engagement trip to Rome and their shared fondness for a certain Caramac chocolate bar. The cake itself was a light and airy vanilla genoise sponge which referenced both the Hot Air Balloon mode of transport to the city of Rome and the Italian origins of the cake and couples destination. A caramac ganache covered the sponge with broken up pieces of the bar used to create the balloons detail together with whole caramac pieces and white chocolate Mikado sticks used to create the effect of a basket. White chocolate button clouds and accompanying embossed vanilla biscuit ‘Ticket to Rome’ completed the scene and celebration.
