My Munday Wedding cake was created for my two great friends Gemma and Graham who last weekend became Mr and Mrs Munday at Preston Court in Kent. Was both bridesmaid and baker and was honoured to create another of my sandwich cake celebration cakes just down the road from Sandwich itself. All 9 sandwich sponges had travelled to Sandwich on the eve of the wedding, before being transported and towered up in the stunning Preston Court Barn. With each cake, crumb and bowl of cream being caught and on occasion tasted by the lovely couple behind the cameras, Toby and Han of Red On Blonde Photography. The cakes themselves were a combination of lemon drizzle and vanilla all sandwiched together with a sweetened cream and cream cheese filling. Generous spoonfuls of lemon curd, raspberry jam and scatterings of fresh raspberries studded and spilled out amongst the creamy layers between the cakes. Light to liberal dustings of icing sugar covered the sponges before all 3 x 3 tiers were decorated with an abundance of fresh strawberries, raspberries and flowers. The flowers, tree trunk cake stand and days stunning bouquets and table decorations were provided by Lorraine and Nicky, the charming and creative pair behind Shrinking Violet Flowers. An assortment of shortbread hearts finished the whole cake off as a special request from Gemma, after she’d seen me use them on the Boost Wedding Cake I created last year. Finally ‘At Last’ by Etta James and by no means least was the first piece of music played at the wedding and the last piece of cake was rightfully enjoyed by the Mundays, on the Monday that followed.
