My Raspberry Rose Cupcake is a cupcake tribute to my Giant Jam Sandwich cake and was made from the last bit of coconut sponge mixture I had left after filling my sandwich moulds. My raspberry and rose jam is hidden inside the cake and topped off with my white chocolate buttercream. Finally I decorated the cake with all the ingredients found within the cake, including coconut flakes, white chocolate buttons and fresh raspberries and roses.
