Rhubard and Custard Cream Crumble cake

My Rhubarb and ‘Custard Cream’ Crumble Cake is a twist on the Nursery pudding classic, but in cake form. The special edition of the Custard Cream biscuit-a National Treasure in itself, provides each slice with extra texture and taste. I used both fresh and powdered custard in the sponge and frosting to heighten it’s flavor alongside the rhubarb in the cake. Now if you can’t decide whether you want a biscuit, cake or pudding, a slice of this will provide all three!
