Following on from my Giant Jam Sandwich Cake I decided to create an equally huge Toast and Marmalade Cake. Using the sliced off top from one of my giant sponge sandwiches I placed the slice, sponge side up under the toaster to achieve a golden colour and crisp crumb texture. Once it had cooled I then proceeded to spread over butter cream and a liberal coating of Marmalade. The only thing left to do was decide which way to cut the slice, diagonally or straight down the middle? Breakfast cake in bed anyone?
