My Wise Owl biscuits are made from a gingerbread biscuit dough that I added ground almonds to. Not only does the ingredient add a pleasing texture to the biscuits, buts it’s addition makes reference to the presence of almonds used to make up the owls features. Whole unblanched almonds make up the eyebrows and beak, while toasted flaked almonds create the feathers. Both are fixed in place with the aid of melted chocolate as to are the eyes. The latter of which are created using a mixture of giant milk chocolate buttons, original sized white chocolate buttons and dark chocolate chips, in the place of pupils. Whether you’re a night owl or not, you’d be wise to take flight and enjoy one morning, noon or night.
